Dairy Free Bunny Pancakes Recipe
STEP 1: Add all dry ingredients to a large bowl and mix.
STEP 2: Add all wet ingredients to the same bowl and whisk until smooth.
STEP 3: Pre-heat your non-stick griddle to about 350 degrees.
STEP 4: After spraying your griddle, use a ½ cup measure to pour the batter into a circular shape. This will be the body of the bunny.
STEP 5: Use the same ½ cup measure, but only fill it half way this time, to pour the batter into another circular shape. This will be for the head of the bunny.
STEP 6: Using a large spoon, pour the batter to create four ovals (two smaller than the others) to make the ears and feet.
STEP 7: Allow the pancakes to cook until bubbles are visible around the edges before flipping.
STEP 8: Garnish, plate, and enjoy!
You can make the bunny tail and foot markings using any garnish of your choice. Some suggestions for making the tail are vegetable margarine or vegan butter or a slice of banana.
